Milanese Chicken Escalope with Peperonata & Mangetout - Another Italian classic. We'll show you how to bread and season the chicken before frying, before creating a peperonata using peppers, tomato passata, oil and garlic.

Orange & Soy Glazed Pork with Fennel, Apple & Carrot Salad - A Far East inspired main that produces zingy orange tangs. We'll show you how to marinate the pork and compliment it with a simple, but unusual salad. The flavours are truly remarkable.

The lesson takes place at the Food Technology Kitchens at Sir Thomas Rich's School, Oakleaze, Gloucester GL2 0LF.
